CEVICHE Ceviche is a regional food of Peru. In 2004 our flag plate was declared as Cultural Heritage of the Nation by the National Institute of Culture (INC) for being the main dish of Peru. Currently every June 28 is celebrated the "National Day of Peruvian Ceviche".
